I've got a jones for good clothes, and I eyeballed those shirts of Pitt's with a keen, envious eye - they look at first like regular French cuff shirts, something made on Jermyn Street. But then you notice that the cuffs are like twice as long as regular French cuffs. He leaves them open, with and without jacket, and it looks very cool. (sample one two three four) I want some of those shirts! But I can't find them anywhere, and no one I talk to in the trade seems to even know what they're called. The only other place I've seen them is in a Prada ad in GQ; my budget, however, is a little thin for Prada, and even if it weren't that green and gold is a little ostentatious for my 7:30-to-5 gig here at Wolfram & Hart. Does anyone know what these kinds of shirts and/or cuffs are called, and where you can get them?

I think this Devore guy had something to do with the shirts. It looks like you can ask if you really want.

A cursory google shows this, indicating the shirts may have been custom made. A post on the IMDB boards says Rusty/Brad's suits are from Ralph Lauren, but it may be BS.

Can you just buy a regular french cuff shirt with a sleeve size that is too short for you? - I guess they probably don't make sizes that are that far off.

InStyle magazine has a Q&A feature where people write in and ask about what brand/designer a certain article of clothing is for pictures of celebrities. You could try there. And, to continue the off-topicness, I'll take Andy Garcia over George Clooney any day.
